For fireworks, you set the exposure, set the focus, set the shutter speed, put the camera on a tripod, attach a remote release cable and point the lens at a region of the sky where you think something interesting is likely to happen. Then you trip the shutter just before you think you'll get a burst like this. Sometimes it works out well, often it doesn't - but the more shots you take the better your chances of getting something interesting
